Spelt, farro, epautre, espelt...whatever you call it, it's healthy and delicious. Spelt, an ancient grain, is closely related to wheat and has a deep, wheaty flavor. The water soluble fiber makes it easier for many people to digest. Pair that with a long, cold fermentation time and you have bread that doesn't cause bloating and other digestion issues. Doesn't hurt that it tastes great, too.
