Organic Sourdough Breads
What is sourdough anyway? Sourdough simply indicates that wild yeast, rather than commercial bakers' yeast, is used to leaven the dough.
Our sourdough starter has been going for years. We started with flour and water mixture to attract wild yeast in the environment. We fed the mixture every day and eventually there was enough wild yeast in the mixture to leaven bread.
When we make a sourdough loaf, we use only organic flours and the simplest, purest ingredients. You will never find preservatives in our products, so we recommend refrigeration for most loaves. Sourdough naturally inhibits mold, so these sourdough loaves can stay on the counter for a day or two.
We also use organic ancient wheats, like Kamut and Einkorn, and ancient grains, like spelt, which is closely related to wheat and has a deep wheaty taste. These wheats and grains are easier for many people to digest and are delicious.
